Can you please tell me when you use the word to be :Shi. Do I use this verb when I’m describing myself:
Wŏ shì Eric. Could I also say wŏ shì gāo. Or would that be wrong?

Hi Eric, wǒ shì gāo doesn’t make sense in Chinese. The way to use “shì” is: Subject + shì + Noun.

Also please remember this structure:

Subject + hěn/ fēi cháng + Adjective
